Meet the chefs…

Scott Pickett

Scott’s love for great produce began early. As a kid on a farm in Kangarilla, it taught him a lot about food and seasonality. Knowing the growers and producers behind the food he ate gave Scott a sense of respect that was never lost. That connection with an environment like that influenced him to become a chef.

Those years set the foundations of his values as a chef and restaurateur today. Scott’s approach always puts food at the front. It’s based on real cooking — with the greatest respect to the produce. Scott wants you to have incredible food and wine experiences, with incredible service, without forgetting that food is the hero.

Mirco Speri — Head Chef

Speri’s culinary journey began with a burgeoning love for procuring, preparing and preserving seasonal produce, which inspired Speri’s fervent farm-to-table approach and uncompromising ‘no-waste’ policy from the beginning. Following culinary training in his native Italy, Speri sharpened his knives in kitchens throughout Verona and Lake Garda, before boarding a cruise liner as the house chef to explore the Mediterranean and beyond.

Settling in London, Speri accepted a chef de partie role at the Halkin Hotel under esteemed chef Stefano Cavallini before furthering his learning with Richard Neat at his eponymous NEAT Restaurant. Relocating to Australia in 2002, Speri accumulated experience at notable restaurants including The European, and The Point, where he first met Pickett.

Best known as former head chef and co-owner of beloved South Yarra Italian restaurant Thirty Eight Chairs, Speri will take the reigns of Pastore in November 2019.
